Chicken
2 boneless chicken breasts
10 green onions
1 tablespoon peanut butter
1 tablespoon soy sauce
1/4 cup dry white wine
1 teaspoon Dijon mustard
1 small clove garlic minced
Cut chicken into strips about 1/2 inch wide. cut onions into 1-inch pieces. In glass dish, blend peanut butter with soy sauce; mix in wine, mustard and garlic. Add chicken and green onions, coating well. Let stand for 5 to 10 minutes.
Thread chicken strips onto skewers accordion-style, interspersing with onion pieces threaded cross-wise. Barbecue or broil about 4 inches from high heat for approximately 4 min. each side or until chicken is no longer pink inside. Makes 2 servings.
